Clean and chop half the onion, crush the garlic clove and saut\u00e9 both in a large pan for a few minutes, then add the blended peeled tomato sauce. Cook the sauce over low heat for about 30 minutes, until it has thickened slightly. Season with salt and set the sauce aside. Bring a pot of salted water to a boil. When the water boils, add the GIGLI OROBIO pasta and cook according to the cooking time indicated on the package. Drain the pasta and toss it in the pan with the tomato sauce.      <\/p>\n\n<p>While the pasta is cooking, cut the burrata in half and place it in a bowl. Add a generous drizzle of oil, a pinch of salt, a sprinkling of pepper, and blend until you have a cream that is not too thick (add a few tablespoons of the pasta cooking water if necessary). Set aside. Then prepare the celery oil. Take the celery stalks, cut them into pieces and blend them together with the leaves in a blender. Using a sieve, press the mixture to extract the celery juice. Add the extra virgin olive oil to the celery juice and emulsify with a whisk until you obtain a creamy mixture. To garnish, prepare the fried basil. Gently wash the basil leaves and then dry them. Dip them in hot seed oil (170\u00b0C). Turn them over quickly; it will only take a few seconds for them to become crispy. Using a slotted spoon, drain them and place them on absorbent baking paper.           <\/p>\n\n<p>Proceed with plating.
