Die Minze fein hacken und mit dem restlichen Oliven\u00f6l, Salz, Pfeffer und \u00be der abgeriebenen Zitronenschale vermischen und \u00fcber die Lachsw\u00fcrfel geben. Das Tatar mindestens 20\/30 Minuten ziehen lassen. Das restliche Viertel der abgeriebenen Zitronenschale zum Garnieren des Tellers am Ende beiseite stellen. Die Stracciatella oder Burrata in Streifen schneiden. Die Strozzapreti in reichlich Salzwasser ca. 5 Minuten al dente kochen. In einer Pfanne bei mittlerer Hitze das Basilikumpesto erw\u00e4rmen, etwas Kochwasser hinzuf\u00fcgen, die al dente gekochte Pasta und die Confit-Tomaten hinzuf\u00fcgen und ziehen lassen. Bei Bedarf einen Sch\u00f6pfl\u00f6ffel Kochwasser hinzuf\u00fcgen.
